Agave
Made from Jabalí (Agave convallis), a rare and highly expressive wild agave prized for its refined aromatics and elegant flavor profile.
Production Process
The agave is slow-cooked in a stone-lined conical oven using oak wood, allowing deep yet delicate flavors to develop. Milling is performed with a traditional Egyptian mill, followed by natural fermentation in pinewood vats, preserving the agave’s purity and complexity.
Distillation
Double distilled (2 distillations) in a copper alembic, resulting in a clean, silky mezcal with exceptional balance and finesse.
Tasting Notes
Soft-bodied with bright, platinum-like tones. On the nose, it presents fresh citrus aromas alongside persistent notes of wildflowers and damp earth. The palate is smooth and silky, offering agave-forward flavors with gentle hints of vanilla and lime. The finish is clean, elegant, and delicately smooth.
