Agave
An ensemble mezcal made from a harmonious blend of Espadín, Madrecuixe, and Mexicano agaves
(Agave angustifolia Haw · Karwinskii · Rhodacantha), creating a complex and well-balanced profile.
Production Process
The agaves are cooked slowly in a stone oven using oak wood, allowing layered flavors to develop. Milling is performed with a traditional Egyptian mill, followed by natural fermentation in pinewood vats, guided by ancestral practices and lunar cycles.
Distillation
Double distilled (2 distillations) in a copper alembic, resulting in a mezcal that is clean, expressive, and structurally refined.
Tasting Notes
Bright and vibrant on the nose, with persistent herbal aromas, subtle woody nuances, and a distinct mineral character. On the palate, it offers cooked agave flavors with a clean, long-lasting expression. The finish is warm, prolonged, and elegantly balanced.
